Yeah pretty much. It's probably easier if I had the right tools and a good space. I'm working in a domestic kitchen with the hot sugar mixture and trying to time the bicarbonate right so as not to burn myself as i manage the reaction. I'm not really because it's been years since I've made honeycomb, but if I did that's what it would be like. I could do with more elbow room and a new copper bottom pot. And new baking trays come to that.
I've got a bit of a fascination with making confectionery. I've done a couple of the courses at William Angliss. After one I ended up with all the concentrated flavours they use a couple of drops of to flavour a couple of kilos of sugar and glucose syrup mixture. There were about 20 small jars of them. I was making fizzy frog with it. It was a recipe one of the teachers from the course gave me.
I've been trying to make nut toffee lately. Just can't get the toffee right.They say Burt Lancaster has one, but I don't believe them.Comment

I haven't had either in many years and have banned consuming any Cadbury products for 19 years. Not a typo.
Violet crumble would have been a preference of mine as a kid and can fondly recall Aunty Vera bringing over Violet Crumbles on a Friday night visits.
