    I've bought a Weber Kettle recently to go with my Weber Family Q, and I am really starting to get into all the nuances of cooking with charcoal, as well as low and slow cooking.
    Charcoal cooking is the best BBQ. I now like in an apartment so miss my Weber Kettle. Try cooking a roast the indirect method, so delicious.

      I loved every moment of traipsing through the Somme Mud around Thiepval, Longuaval, Beaumont Hamel,as well as locations like Villers Brettoneaux, Pozierre, Messine, Polygon Wood, Fromelles, andTyne Cot Cemetary Memorial (where my Great grandfather's name is listed.
      That exactly describes my affection for the 100 years war in general and the battle of Agincourt in particular.

      Although I have been reading a bit about Billy Sing in WWI because my grandad served as a sniper in WWI too.
      They say Burt Lancaster has one, but I don't believe them.

          Yep. Agreed, I've done all manner of roasts, as well as babyback ribs and brisket.
          I did some beautiful chicken marylands on Saturday using some Gidgee lump charcoal and hickory chunks, and some basil/oarmesan buttered corn on the cob alongside.
          And on Sunday again with the lump charcoal, a dukkah rubbed rack of lamb with duck fat roasted potatoes and some other vege. Absolutely superb.
          I'm gearing up for an early start on Friday morning to do about a 10 hour cook of a lovely 2.5kg flat end of brisket over about 10 hrs.

            More of an In Bruges guy?

                I aim to have the brisket on the grill by 6am.
                Previously I've wrapped it at the point it begins to stall, but I'm aiming to ride it out this time.
                And then once it hits 203F take it out, wrap it and rest it in the esky for 2 hrs

                        I am also the cook in our house , I am just a cook but when I ran Coach tours I used to love to come up with different ideas and recipes for the groups.
                        I must have been ok because when I sold our business a Coach company wanted to take me on the road with them.

                        I spent a bit of time last night going through my fly fishing gear for my vice and etc, I am determined to finally try and tie a believable caddis or red tag that a nice trout will find inviting.

                            I'm another who enjoys cooking. I enjoy looking at various YT cooks and getting ideas from them
                            One of them "Sam the Cooking Guy" I find particularly entertaining to watch.

                            Two other hobbies are related to music mainly Bluegrass music and then West Coast Swing dancing and Irish Dancing.
                            I've been to the Grand Ole Opry a few times and Nashville would be a great place to live

                              When i was a young bloke I had grand designs on being the next Jimi Hendrix.. unfortunately I was thwarted only by a lack of talent!
                              That didnt stop me from playing in some forgettable bands with my mates as a young bloke pretending we were the next incarnation of The Stooges or Nirvana.

                              I've got some lovely guitars, my latest being a US Special Stratocaster, alonside my Maton semi acoustic, and my late Dad's Epiphone Regent archtop.

                              I have a passion for The Blues, especially Taj Mahal, Robert Johnson, Son House, Albert King, Stevie Ray Vaughan, Jimmie Vaughan, The Fabulous Thunderbirds.
                              One of my earliest music memories as a kid was listening to an album by an Aussie Blues great by the name of Dutch Tilders.


                              I also love traditional Americana style music that blends alot of Bluegrass, Country and Folk, like The Band, The Flying Burrito Brothers, and Dylan, plus the Gram Parson's led Byrds album Sweetheart of the Rodeo.
                              I'm a massive Beatles fan too.

                                Saddened today to hear of the passing of John Prine. Only discovered him about 6 months ago.
