It's starting to come along, been in the oven 2 hours now. I've been sitting on my couch during that time so haven't really noticed the gradual build, the GF's just gotten home and says it hit her in the face as she entered.......
I think if you asked my GF she'd say one Bulldogs supporter in the house is quite enough for the time being!TF is this?.........Obviously you're not a golfer.Comment

Having just come back from a run the place really has the lamb/garlic/spice smell. It's awesome!
Good move BAD. Slow cooking chow whilst out on a Sunday is the way to go. I know you're into your Weber kettle as am I, unfortunately you have to stick around when they're going otherwise it can turn out poorly. It's the main thing stopping me from using it more.TF is this?.........Obviously you're not a golfer.Comment

For my new alfresco kitchen I took it a step further and bought a cabinet smoker. It's basically a digital oven with a smoke generator. You can set it to cook for a specific period of time before you go to bed and have lunch for the next day ready to go without having to check on it. They're not cheap but are really convenient for busy people who like slow cooking.

I had seen that 'stache but haven't tried it yet.
I'm probably at a stage now where I can regulate temperature for over an hour at a time without having to check for the most part (I mostly do however - it's almost obsessive), so if it buys me another hour or so between checks then I should probably give it a shot.TF is this?.........Obviously you're not a golfer.Comment

I'm a bit the same, I like to regularly check it because it makes me feel like I'm cooking. Using the snake method I had a brisket on and went out for the afternoon and 6 hours later I got home and the temperature was still bang on 250F, so you can rely on it pretty well if you need to go out.

So the pulled lamb was magnificent.
Pro-tip - use either a non-stick or ceramic/iron dish for the slow cooking process, as the glaze sticks to anything else really badly. When adding the lemon ensure the pith is removed to take away the bitterness, our marinade was a bit too full on with the lemon. The yoghurt can be done with pomegranate molasses rather than seeds if pomegranate is out of season.
We had this with a bottle of 2011 Hennings Shiraz (Heathcote), it went quite well but would have been better if there was less lemony bitterness through the dish.

Went to the market and picked up some beef ribs to have a crack at slow cooking them. Just applied some Cajun rub and will smoke them for 4 hours and then cook them for another 4.
I've pretty much mastered pork ribs but this looks a different test. 2 racks of ribs were 2 kilos!

In my spare time I like to fight fires and shoot arrows into home made targets ... wait ... sorry, that's not me.
With my work I don't really get a lot of spare time, and what I do get is normally engulfed in family goings-on or watching footy. But that's fine; I love my lot in life.
When I do get time to myself, I am actually in the process of writing a series of children's books. (Currently looking for a publisher who is will to take a gamble on an unknown, part-time writer).
How's your writing going a year and a half down the track Scraggers? Have you had anything published?They say Burt Lancaster has one, but I don't believe them.Comment
