Did it take long? I can remember my dad rooting around st the bottom of the incinerator removing the burnt pieces of wood.
They say Burt Lancaster has one, but I don't believe them.

      Not with Olive Tree branches.

Essentially it is like a fire place when you burn wood. You let it burn right down till it glows and emits smoke. The trick is to get it just right so it doesn't burn out or flame up too much when the fat from the meat drips into it.

Yeah. When they make a whole heap somebody has to stay awake for 24 hours making sure it glows but doesn't flame. I've no idea why they didn't think to take it on shifts. Maybe it was unlucky or uneconomic or something.

Essentially, that style of grilling (if you could call it that) relies on you preparing the charcoal to a point where it's very very hot, and chucking massive hunks of meat right on it. We had a spice rub that was a bit heavy on the oil for half of it, and resulted in a bit too much smoke, whilst we also had a simple light olive oil, salt and pepper rub on the other half. That half turned out a lot better. After about nine minutes on the charcoal, all but one piece (which was smaller) required a whirl in the oven for five or so minutes.

Good result. Next time I'll use a dry rub at most if I decide to go beyond the normal seasoning with a touch of olive oil. The outcome is a nice crust and smokey flavour (ours was over smoked in bits and pieces due to the oily rub and ensuing flames) and slices of beef that melt in your mouth, but also have that outdoor style. Coupled with the pumpkin and roquette salad with balsamic glaze my salad master partner put together and the perfect match of heavy and light was on the plate.

Matched with Exile 2009 Barossa, and Cape Metelle 2012 Margaret River shiraz's and it was heaven.

Finished off with some nice Pedro Ximenez, Stanton and Killeen Topaque - and 16 y.o. Lagavulin single malt and it's been a very good night.

          Yep, I'm a bit of a wanker.
Made me laugh. Sounds like you had a great time Jee

Little off track but the topic reminded me of one of my favourite all time Grand Design Revisited episodes featuring a charcoal burner's house.

              What a gorgeous house.

If I won tattslotto that's the sort of house I'd buy.

Yep. Backing onto a river so I just have to walk into the back yard to cast a line. A boat moored at the shore.

The rest of the world could suit itself then. I'm not that bothered.

Just as I was enjoying my semi retirement my wife has gone in partnership with a good friend of hers in a Vintage/Collectables/Antique shop in Rosebud. No rest for the wicked as I have been roped in too.Initially I said no as it is going to cut into my time on Woof but then was told there was a computer there so all is good.Enjoying it too.

This is a dangerous mix... I admit it's dumb on my part, but early last year I was in a similar type store and saw that Queen Eliabeth & Sir Prince Phillip toured Melbourne in 1954 and I believe we're around our western suburbs in our great season. So my wife says as a joke that maybe 'why you haven't won a premiership since then, maybe you invite QE2 out and buy the (inexpensive) 1954 Royal Tour Memoribilia to break the drought'. Well I did buy it, and then our form turned last year. So I bought some more off eBay and then out form kept getting better. But I then ran out of things to buy at a cheap price by late year. Blame Talia, not me.

So I've either got to get to buying it for the sake of all of us and the club, or admit it was a coincidence and re-sell it as a big collection. Feel free to tell me that my purchasing of such items from 1954 doesn't impact the club's fortune this season!! Or, if this is a thing to invite Liz & Phil to tour our club facilities immediately!!
